Why?
Because a ‘bar’ is a great shape to store and to carry with beings. And standardizing the shape throughout the universe means it is easy to restock cargo holds of ships.
That doesn’t mean the taste of the bars is standardized. Nourishment bars are available in a wide variety of flavors and textures. If you come from planet X and X berries is a popular food there, you can likely find nourishment bars in X berry flavor.
